I could not hold off making that viral celery salad one second longer.
Its constant appearance in my feed came at a great time though.
I am currently up to my eyeballs with protein and feel that THIS Celery Salad is the answer to my protein frustration.

Luckily celery and apples are usually the last things still standing in my vegetable arsenal but the whole putting them TOGETHER thing was never a consideration – UNTIL NOW!

what you need
SALAD:
- PATIENCE! chop chop chop 🔪
- 1 bunch celery, chopped (10 or more stalks)
- 1 large apple, diced
- 1 lg cucumber, diced
- 1 bunch fresh parsley, or dry parsley (measure with your heart)
- 8-10 dates, chopped ( dried fruit)
- 1/2 cup chopped walnuts or pecans
- Optional seeds of choice: hemp, pumpkin, sunflower
Dressing:
- 1 1/5 cups grated or shaved Parmesan
- 1 bunch dill, or dried (❤️ measure)
- 2 large lemons, juiced
- 1/2 cup mayo
- 2 tbsp olive oil
- 1 tsp each: salt and pepper
- 2 garlic cloves, minced
- 2 tsp maple syrup
- Optional; poppy seeds
this is how we do it
1. Combine all the dressing ingredients in a large bowl.
2. Add all the chopped veg as you go.
3. Cool in fridge for 1/2 hr
That’s it. DONE.

This Celery Salad is such a nice departure from all my protein recipes.
It’s fresh, it’s crunchy, tart with a little sweetness and very filling.

I never thought I could go to town on an entire celery stalk but apparently I can!
