what you need (double batch)
- 6 cups rolled oats
- 3 cups chopped nuts or seeds
- 1 1/4 cups sweetener (maple syrup, honey, sugar, etc.)
- 1 cup all-purpose flour
- 1/2 cup water
- 2 egg whites
- 1 tbsp vanilla extract
- 3/4 cup coconut oil, melted (or applesauce)
- 2 tsp salt
- 2 cups dried fruit
Mix + match ideas:
- Nuts: almonds, walnuts, pecans, cashews
- Seeds: sunflower, pumpkin
- Dried fruit: raisins, coconut, apricots, dried berries
this is how we do it
- Preheat oven to 300°F
- In a large bowl, mix everything dry (you can hold off on the dry fruit til after baking to maintain softness or not).
- In a smaller bowl wet ingredients.
- Mix wet into dry.
- Spread onto baking sheets and press it down (this is key for clusters!).
- Bake for 20 minutes.
- Flip in large sections, return to oven, and bake another 20–30 minutes until golden and dry.
- Let cool completely (this is when clusters form!).
- Break up to your desired chunkiness and stir in dried fruit.
Store in an airtight container for a few weeks… if it lasts that long 😉
