The world needs more unity.
Today we honour Poland and Italy with this pizza-like potato pancake.

Plus I had a head of broccoli slowly deteriorating and calling out to me to be recreated very soon.
I answered that call, and it’s so good!
Not a fritatta AT ALL this pizza-latke recipe highly customizable so try swapping out the veg or adding more spices!
I see a fajita-latke in my near future, possibilities are endless!
what you need
large mixing bowl
medium mixing bowl
shredder or food processor
parchment paper
large baking pan
ingredients
2 large sweet onions or 1 leek, sliced thin
4 potatoes, shredded, rinsed well and drained
2 cups broccoli florets, the smaller the more flexible the crust
1/2 red pepper, small dice
1 small tomato, sliced thin
4 eggs
4 tbsp olive oil
1/4 cup milk
1 tsp baking powder
7 tbsp flour
2 tsp salt & pepper
2 cups grated cheese
1/2 cup Parmesan
oregano and basil to sprinkle over top
this is how we do it
PREHEAT oven to 350 degrees and LINE a baking sheet with parchment paper.
In a large bowl MIX the potatoes, broccoli, onion and red pepper.
In a med bowl WHISK together the eggs, oil, milk, baking powder, flour and S &P til lump free.
Add the liquid over top the veggies and MIX til combined.
SPREAD the mixture onto the baking pan evenly (no bald spots) squish inwards if too many bald spots.
PLACE the tomato slices all over the top.
BAKE for 30 minutes.
REMOVE from oven and SPRINKLE with cheeses and oregano and basil.
BAKE 10 minutes.

That’s all folks. If you’re into food prep (you highly organized humans I love YOU!) this recipe is quicker than frozen.
I used the food processor for the potatoes.
They got shredded and I did not!

It could be breakfast, or lunch easily.

Not a hearty enough dinner for most people.
Roll it up and head out the door – look how flexible!

This may seem obsessive but the crust on this baby is fine!

So satisfying! Make it gluten and dairy free by swapping out the milk and flour.

There are so many possible variations of this I’m going to try but for this version, I think a drizzle of pizza or bbq sauce over top would also be a nice addition.
