Piña coladas. Not just for day drinking at the pool.

There are so many reasons to make Pina Colada Overnight Oats.
- It’s hot outside and you don’t feel like anything at all really.
- You’re going to the cottage and you want to bring something other than a pasta salad.
- It kind of feels like you’re indulging… like a vacation from breakfasts.
Whatever the deal is here’s all you need to get these Pina Colada Overnight Oats going.
ingredients (4 servings)
- 2 cups rolled oats (yes rolled, not instant)
- 1/4 cup chia seeds
- 2 cups coconut milk (almond, oat)
- 1 cup Greek yogurt
- 1/4 cup Maple Syrup (to taste)
- 1/4 cup pineapple, diced
- 1 tbsp coconut flakes (optional)
Toppers: Pineapple, coconut flakes, walnut pieces

this is how we do it
Mix all the ingredients except the toppers and refrigerate overnight.
You can place the overnight oats into separate jars so you have a nice grab and go for those rushed mornings or when everyone is waking up at different times.

Or you can put it in a bowl and stare out the window taking things nice and slow.
