Every time I make this meal people go crazy for it and I end up wondering WHY I don’t make it more often.
I promise you that anyone walking into your home when you make this will float DIRECTLY to the stove top and possibly hug your face in sheer joy.
This is also a GREAT recipe to give your teens to tackle, which will build their cooking confidence up with all the compliments and allow you a night off!

what you need to do this
Large Frying Pan
ingredients
1lb sausages
2 tbsp Olive Oil
3 cups peppers, assorted colours, sliced medium thin
1 cup red onions, peeled, halved and then sliced along the lines of the onion (or whatever you want)
handful of cherry tomatoes (optional)
3 cloves garlic, minced
2 cups egg noodles (1/2 pkge)
1 can of beer
6 oz can of tomato paste
1 tbsp fresh cilantro (or parsley) dried is also fine
1 tbsp oregano, dry
1 tbsp hot sauce
S & P to taste

this is how we do it
REMOVE the skin from the sausages and slice up ( will be mushy without the skin – don’t panic)
SAUTE til nicely browned.
REMOVE from pan. Will look like cute little meatballs.

CLEAR the pan of all the oil from the sausages with a paper towel but leave any crispy bits, your just sopping up the grease.
DRIZZLE in the olive oil.
ADD in the peppers and onions. and

SAUTE til onions are looking nicely golden (even browning).

Now in goes EVERYTHING else, garlic, tomatoes, spices, tomato paste, beer, hot sauce, S & P to taste.
SIMMER until looks saucy and everyone in your neighborhood starts randomly milling around your house wafting in all your wicked cooking prowess.

That’s pretty much it.

I suggest doubling this because this only serves 4.
I show it served on egg noodles but rice or fettuccine or even on a bun would be wicked too.
Also add micro greens to everything – there’s a ton of varieties and they really amp up any meal.
It is because of this recipe I always make sure to have an array of fresh peppers and red onions in the fridge and sausages in the freezer.
The beer is kind of a given in my house but if you don’t have it, just replace with 1 1/2 cups chicken stock.
