A delicious recipe that is both filling and freezer friendly.
Doesn’t sound super sexy but I guess that depends on whether you think dirtying every dish in your house every morning is sexy…
Here’s what you get with this delicious, traveling delight:
1. allows you to meal prep for single use dispensing during the week, on the fly, as needed as a replacement for store bought granola bars in a snack/breakfast capacity
2. takes away a little of that daily ‘OMG I have to cook every thing every day for every one‘ and gives you some breathing room to enjoy your coffee and only using that one dish to let the banana oatmeal bar defrost on.
SIDE BAR: I say screw it just use a paper towel and call it a day!
Whether you enjoy this as is or dress it up with banana’s best friends peanut butter and maple syrup it’s a great addition to your recipe file.
stuff you need to do this
8×8 square pan
oil to grease the pan
Parchment Paper
Large mixing bowl
Measuring cups.

Don’t have dates?
Use dried cranberries.
Don’t like walnuts?
Replace with sliced almonds or chocolate chips or just omit completely!
ingredients
1 cups mashed ripe bananas
– works out to 2 large bananas
1/2 cup Greek yogurt
– need a dairy free version? Use 1 cup applesauce.
1/2 cup milk
– any milk or milk free beverage like cashew milk or almond milk
2 cups old fashioned rolled oats
– make this with GF oats or quick cooking oats is fine as well
1/4 cup hemp seeds
1 tsp baking powder
– preferably aluminum free cause no one needs aluminum in or on their body
1/2 tsp each baking soda and ground cinnamon
– if you love cinnamon bump that up to a tsp or add 1/2 tsp of cardamom (chai latte spice sooo good)
1/4 tsp salt
1/3 cup total of any dried fruit – I used dry blueberries and dates
– think raisins, cranberries, blueberries or medjool dates (pitted!) and check your local bulk barn for weird things like dried strawberries!
1/2 cup chopped walnuts or sliced almonds
– chocolate chips would be good too or even 1/2 cup nuts and 1/4 cup chocolate chips!
this is how we do it:
PREHEAT oven to 375 degrees
LINE the greased 8×8 pan with parchment paper
To the mixing bowl ADD bananas, yogurt, and milk –STIR IT UP
ADD everything BUT the dry fruits and nuts (chocolate chips if using) – MIX til combined
Now its time to STIR in the dry fruit, nuts / chocolate chips

ADD everything to your parchment paper covered pan and BAKE 40 min.
TEST by inserting a toothpick or wooden skewer, if it comes out with nothing sticking to it she’s ready!

Pull out with sides of parchment paper and COOL for 10 min on a rack if you have one.
CUT into squares.

Rip off a hunk with your hands…just kidding.
I know that’s what the above picture looks like but sometimes baking gets real and doesn’t look perfect.
But this picture below all dressed up fancy like looks pretty darned perfect!

Heat up these bars and add some peanut/almond butter on top and sprinkle more cinnamon, cacao, sea salt, flax seeds and hmmm maybe definitely some maple syrup or honey.
To freeze these without using all kinds of plastic wrap just put them on a parchment lined plate or flat thing and place in the freezer.
Walk away and forget about them for about … til you remember they’re in there.
Now that they have been individually frozen, they won’t stick together.
Just pop them into a container to have on hand at any time, they won’t stick together.
I grab them on longish car rides or when I know I won’t be home for a snack or meal and will get tempted with less than nutritious gas station choices.
