Sushi Bake or not…

What a hit this sushi bake was the both times I made it in 1 week!

If you’ve seen it making the rounds on social media and were wondering if it’s worth the trouble – can confirm!

There’s a few steps.

This is not a dump and go.

I’m going to talk you through it.

Let’s do this!

what you need

8×8 pan

Instant Pot or whatever you make rice in

Spatula

Pastry brush

ingredients

  • 1 1/2 cups each sushi rice and water
  • 4 tbsp rice vinegar
  • 3/4 tbsp salt
  • 1 tbsp sugar
  • Oil
  • 3 tbsp cream cheese, room temperature
  • 2 tbsp mayo (kewpie if possible)
  • 2 tbsp sriracha
  • 1 tbsp soya sauce
  • 2 tsp wasabi
  • 3 scallions chopped fine, divided
  • 1lb imitation crab meat (Suriname) found in the meat section on the shelf
  • 1/4 cup furikake (Japanese spice made of dried nori, toasted sesame seeds, spices). Toasted sesame seeds will work just fine as well.
  • Avocado, sliced
  • Cucumber, finely chopped
  • Nori (seaweed sheets or the little snack packs)
  1. PREPARE THE SUSHI

STOVETOP

Follow instructions on the rice package for stovetop preparation.

INSTANT POT

Place equal parts sushi rice and water into pot and cook on rice setting (12 minutes, low pressure, natural release).

2. Prep the cooked rice

Grease your 8×8 pan and place the sushi rice in it.

– In a small bowl mix the vinegar, salt and sugar till dissolved.

Gently mix the seasoning into the rice imagining each rice touches the seasoning.

(This helps you be gentle while combining).

Pat down into the pan evenly.

Cool 30 minutes.

3. Prepare topping

  • Preheat oven to 425, drizzle rice with 2 tbsp oil and brush out evenly.
  • Bake rice 10 minutes.
  • Mix cream cheese, sauces, and mayo till smooth.
  • Fold in 2/3 green onion
  • Fold in shredded and chopped up crab.

4. Final asssembly

  • Remove rice from oven, sprinkle evenly with furikake.
  • Reduce oven heat to 375.
  • Spread crab mixture overtop.
  • Drizzle mayo and sriracha on top.
  • Bake 15 minutes.
  • Cool 10 minutes.

5. Finale

  • Sprinkle with remaining green onions

6. Serving

Serve with cucumbers and avocado on the side for individual builds.

Also having a cool flat wooden spoon seems just right.

If using nori sheets cut into 4.

Spoon soya sauce on top and that’s a wrap (literally).

Alternatively I’ve seen people make this into a bowl and eat with chopsticks or use scoop nacho chips.

Both were equally delicious!

As for the baking part…it’s a nice touch but in a pinch you could get away with not baking it.

It takes a little forethought and a few steps but I tell you this will be a recipe you double after trying.

Note: use a 9 x 13 pan if doubling.
