Buttercup Squash

I know you’ve seen her before and you just walked on by didn’t you?

Do not be alarmed, this is a buttercup squash.

She is delicious and worth a try.

The hardest thing is splitting her open – I use the hammer the knife way (see above).

If you hate your cutting board you can also smash the pumpkin into it with the knife inside.

Let’s go make some now!

First things first it’s prep time, split the squash in half.

It’s kind of wild actually but the smell of this raw squash is melon? See for yourself.

Scoop out the seeds and set them aside we’re going to roast them too.

All sliced up on a large baking pan with foil.

Brush some olive oil on and add salt and pepper to both sides.

The option to add some maple syrup to this is there.

Delicious both ways.

Pop into a 400 degree oven for 35 min.

Flip half way through.

Mix the seeds up with some oil, salt and pepper and roast for 10 minutes at 400.

Now you’re done.

A snack and a side dish that literally goes with anything.

This squash gives you a feeling of satiety when added to basically any meal you want.
I’m a fan of having it along eggs.

When random hunger hits I grab a piece and boom – hunger tamed.

I’m now slightly obsessed with squash and the nice steady energy it provides.
