Mastering Perfectly Roasted Broccoli

Do you know how to roast broccoli? Probably.

Does it fulfill your roasted broccoli expectations? Hopefully.

IF, by chance you are secretly ticked off every time you pull out that raw, yet somehow burnt broccoli from the oven you, my friend, have come to the right place.

There is only one step that is keeping you on the other side of perfectly roasted broccoli.

Once revealed, I promise, you will never look back.

ingredients

  • 6-8 cups of broccoli florets
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tbsp honey
  • 1/4 tsp red pepper flakes

this is how we do it

  • preheat oven to 400F or 200C
  • warm the olive oil in a small pot
  • add in the garlic and cook gently for 1 minute – remove from heat
  • mix in the honey and red pepper flakes

(You can opt out of this part completely and just drizzle olive oil over the florets.)

  • on a parchment paper lined pan spread the broccoli out evenly
  • cover the broccoli – this is the SECRET step!

Not so secret now.

This allows the broccoli to cook on the inside for awhile before we expose it to some direct heat.

  • cook for 18 min covered, remove foil top
  • great opportunity to add some grated Parmesan on top now for that added crisp factor
  • cook 10 minutes uncovered or longer if you want more brown bits

There you have it! Perfectly cooked (not mushy) broccoli with a golden roast finish.

Serve as a side dish or throw into a stir-fry or omelette.
