This tried and true method came to me through my friend Reenee who seems to just whip up bacon and egg sandwiches out of thin air, never skipping a beat in conversation and never doing battle with multiple frying pans.
Here’s the secret.
Cook your bacon.
Place it on a paper towel nice and even.

Roll it up like a sushi roll so the bacon is in a single row the whole way.
This allows you to unroll and take just what you need.
Then you freeze it like so:
