Chicken with Vegetables, Stuffing and Gravy – ONE POT!

Yes, you read that right. This is a COMPLETE meal in the slow cooker.

Add a salad and now you’re just showing off.

🔹Just you and the dog but you still want to come home to a beautiful meal?

Put this in the slow cooker in the morning and walk away.

Go now and start up your slow cooker.

What a feel good meal!

The house smells like momma’s putting on a Sunday Dinner.

I wanted to make this again almost immediately it was so darned satisfying and weirdly nostalgic.

Nostalgic of a time when I was not the one who did all the cooking, all the time.

So when I was 13. Anyways…

Let me show you how stupid easy this.

what you need

  • Slow Cooker

ingredients

  • Chicken thighs, skin on or off, pan fried or not doesn’t matter
  • Spices 1 tsp each: kosher salt, ground pepper, Italian seasoning, garlic powder sprinkled overtop the chicken.
  • Vegetables: sliced carrots, green beans, peas, sliced onions – whatever you have enough to layer overtop the chicken.
  • I added some dry cranberries for a colourful zip.

Layer on a box of stuffing mix.

Combine in a bowl:

– 1 cup of chicken broth

– 1 can cream of anything you have on hand soup

-1/4 cup sour cream

– 1/4 cup melted butter.

Pour over the stuffing but don’t mix!

Lid goes on and slow cook on low for 6 hrs – 7 hrs.

Take the lid off, crank it to high and let the edges get crispy.

This dinner is a keeper!
