Authentic Spanish Tortilla Recipe | Easy and Delicious

Spain’s food is amazing.

Everything you eat there takes you on a flavour vacation.

Spanish Tortilla

Of all the fancy foods we could have fallen in love with in this country we picked the Spanish Tortilla. The most NOT fancy food.

Or is it?

No.

It’s definitely not fancy.

Only 4 ingredients.

Don’t let that fool you this is a breakfast that will impress.

It could even be made with 2 ingredients!

Ok enough drama let’s do this.

You will need:

  • Air fryer
  • 8” baking pan for the air fryer
  • Parchment paper ( make sure to cut a piece to fit before you do any baking)

  • 350 grams (2 lg potatos)
  • 1 small onion (optional)
  • 1/2 cup grated cheese optional
  • 4 eggs
  • Olive oil
  • Seasonings of choice

this is how we do it

Slice the potatos thin and season.

I use salt and pepper and sometimes paprika or garlic.

Do not slice the onions too thin or they will fall through the grate of your air fryer and be lost forever.

While you’re completing steps 1-4 whisk up your eggs and cheese.

Remove the potatos and onion from the air fryer and set aside.

Crank up the air fryer to 200 degrees Celsius.

Grease your pan and bake 5 minutes.

Now get your pre cut parchment paper and place into the hot baking pan.

It will stick to the bottom of the pan because of the grease.

Pro Tip


You can also crumple up the parchment paper as if you’re going to throw it away and then unfold and use.

It will be more friendly to fit the shape of your pan.

Place the potatoes in the pan and pour the egg mixture overtop.

Bake 22 min at 140 degrees Celsius.

Serve with breakfasty type items.

Eat it on its own.

Anyway you slice this it’s a winner.

Honestly no idea just how many times I’ve made this.

Feel free to add peppers or green onions and experiment with the spices, this is a very forgiving recipe.

Don’t Get Overwhelmed


As usual reading the steps to this makes it seem like a ridiculously involved recipe but once you make it you can use your own notes.

I use this:

If you want to be fancy you could call this a Layered Potato Quiche or you could call it a Potato Pie either way is true! In Spain this as a traditional breakfast that is VERY popular!

  • Air Fryer
  • Round 8" cake pan
  • 350 grams potatos, sliced thin (Approx. 2 large`)
  • 2 tbs olive oil
  • pinch salt
  • 1 medium onion, lg dice or sliced (don't want it to fall through the Air Fryer grate)
  • 1 tbs olive oil
  • 4 eggs
  1. Mix sliced potato's with oil and salt.

  2. Air fry at 180℃ for 10 min, shaking time to time.

  3. After 10 min, add onions and more oil if needed. Air fry for another 10 min at 180℃ for 10 min. Shaking a few times.

  4. Remove potato and onions from air fryer, set aside.

  5. Grease the baking pan, place in air fryer (empty) for 5 min at 200℃.

  6. Remove from air fryer and carefully line with parchment paper. Add potato's, onions and eggs.

  7. Air fry for 22 min at 140℃

  8. Serve with bacon, sliced tomatos and avocado or do like they do in Spain and have it on a bun with a glass of homemade red wine!
