Maybe climate change has your doorway packed with snow up to your eyeballs and you can’t do groceries – enter stage left, this lentil curry.
But it’s even more than that.
ingredients
- 3 tbsp coconut oil
- 4 garlic cloves
- 1 tbsp ginger powder
- 1 onion, chopped
- 1 large carrot, quartered chopped thin ( think spoon friendly size
- 2 tbsp curry
- 1/2 tsp tumeric
- 1/2 tsp cayenne pepper
- 1 tsp salt (adjust to taste as you go)
- 1/2 tsp black pepper
- 1 cup dried lentils, rinsed
- 14 oz can unsweetened coconut milk full fat
- 1 cup tomato sauce
- 3 cups broth or water
- Cilantro chopped to taste
- Greek yogurt optional
- Basmati rice
this is how we do it

- Sauté the onion, garlic and ginger powder til the onion gets soft.
- If it’s not the end of the world and you happen to have a carrot – add that to the sauté above.
- Add all the spices, stir and cook for 2 min.
- Stir in the lentils, coconut milk, tomato sauce (or diced tomatoes) and broth.
- Bring to a simmer and let cook that way for 20 mins covered,
- Remove lid and cook another 10 min. or more to thicken.
- Add cilantro.
Done ☑️
Serve over basmati rice with a blob of Greek yogurt.
