
This pulled pork recipe has been a crowd pleaser for the last 30 years to both family and friends.
It was also one of the most popular lunches served on S/V Knot Anchored when we were running yacht charters in the British Virgin Islands.
I served it over nachos with all the fixings. The guests went bananas for it!
Only 4 ingredients.
What used to be done over an 8 hr time period in the slow cooker, only takes 1.5 hrs in the Instant Pot and DAMN it’s good!
Read on for your go-to dock side lunch of the summer.
Pulled Pork Nachos / sliders / lettuce cups etc…
ingredients
- 3 – 4 lb pork roast
- 1 can Dr Pepper or Coke (do the sugar kind no zero or light this time)
- Seasoning salt
- 3 onions, halved then sliced
- Bottle of your favourite BBQ sauce
- Instant Pot ( slow cooker directions at the bottom)

this is how we do it
Remove all the string off the roast.

Sprinkle some seasoning salt on top. Or not no big deal.

Sauté the onions in some oil in the Instant Pot till golden.
Make sure to scrape up any bits off the bottom or you’ll get a burn notification.

Plop that roast on top, fat side up.
Slather some bbq sauce on (1 cup) and pour in the soda to the side so all the sauce stays on top.
Lift the roast up so the liquid and onions are underneath.

Set the IP to Pressure Cook (manual) to 1 hour 5 minutes.
Make sure you’re set to seal NOT vent on top.

Once you’re time is up, throw a towel over the vent and do a quick release. Use a spoon or something and don’t stand overtop the vent.
That’s some very hot air coming out like a steam whistle.
Remove the pork, shred it.

There will be left over liquid in the pot.
Pour it out into another bowl.
Place shredded pork back into IP add in as much Bbq sauce as you like and some juice to keep it moist.
The quantity part is a learn as you go just don’t ever get rid of the juice it’s a must.
Cover, set to warm.
Grab your bathing suit and floppy hat and you and lunch are done!

serving options
NACHOS: spread over a pan of nachos add grated cheese and provide SIDES of sour cream, green onions, pickled banana peppers and hot sauce.
SANDWICHES / SLIDERS: put it on a bun that’s slathered with bbq sauce and add coleslaw on top or to the side.
LETTUCE WRAPS: same as nachos but use lettuce wraps!

Quick COLESLAW
- Bag of coleslaw
- 1/2 cup mayo
- 2 tbsp vinegar
- 1 tsp lemon juice
- 1 tbsp sugar
- 1 tsp celery salt
- Salt and pepper to taste
Mix and let marinate in the fridge 30 min.
I have no pictures of the nachos because it never seems right to bring them to the table and say “hold on everybody, I need to take a picture”.
Would not go over well!
SLOW COOKER PULLED PORK
Same instructions just everything goes in the slow cooker for 8 hrs on low.
