Quick Pickling – cucumbers 🥒

Now we already know how to store cucumbers for a really long time from this post right?

But what if we’re looking for an interesting mini side or something for a charcuterie board or just really craving some vinegar?

Here is an option, quick pickled cucumbers.

this is what you’ll need

  • Large tray
  • Jar that will fit a sliced English (the long ones) cucumber in it.
  • Cutting board
  • Knife

ingredients

  • 1 English cucumber, sliced 1/4”
  • Kosher salt
  • Fresh ground pepper
  • 2 tbsp apple cider vinegar
  • 1/4 tsp sugar
  • 1/4 tsp red chili flakes
  • Dill sprigs for garnish (which I didn’t have on hand but would have looked aesthetically pleasing)

this is how we do it

Arrange the cukes on a large platter (single layer) sprinkle with salt and pepper.

Place in fridge covered for 1 hour.

Add all the vinegar and spices to the jar and shake it up.

Remove the cucumber slices from the platter (no excess juices) and place into the jar.

Let sit in fridge for 3 – 4 hours changing the bottle posture whenever you remember to.

ie put it on its side, upside down, give it a shake.

And your done.

Tweak the ingredients to your liking each time you make these.

So good on a charcuterie board.
